This is an ideal fitness dish; the dish that makes you jump, run, create, and not just take a nap. It’s really delicious and nourishing, full of protein, and a perfect alternative to mundane boiled buckwheat: with spicy bryndza and crunchy sesame and linseeds it turns into something really exquisite! By the way, it’s also a wonderful opportunity to ‘recycle’ yesterday-old buckwheat that no one is willing to eat. So, give it a try!
Italian biscotti
These Italian biscuits with varied filling are unbelievably tasty: so crunchy, aromatic and – incredibly – healthy (low sugar and fat rate, lots of nuts)! They’re really easy and fast to cook as well. Try them with coffee or white wine and dive into the hedonist’s paradise!
Brussel sprouts salad
Do you still believe that Brussel sprouts are bitter, difficult to cook and generally unpalatable? Forget this. Sour-sweet dressing of this salad, along with creamy Feta cheese, sweet pomegranate seeds and honey-coated walnuts, will turn the Brussel sprouts, stir-fried and baked in their turn, into something really delectable, tender and aromatic. Dare to try and you’ll be genuinely impressed by this winter and yet so colourful a salad!
Spicy tomato-bean soup
Winter is a perfect time for hearty, filling and nourishing dishes and this soup is just like that. It’s really delicious and a healthy alternative for all soup-haters (as I am): there’s not much water, no potatoes, lots of tomatoes, aromatic spices and cheeeese! My first thought when I was cooking this soup was that it smells like pizza. Just give it a try and add more color to these winter days!
Chickpeas-basil salad
This incredible salad harmoniously combines everything: fresh vegetables, creamy nourishing chickpeas, fragrant basil and soft Feta cheese: a true reminiscence of summer! It’s very easy to cook, filling and healthy. In these cold, almost winter days, just try this salad and surrender to nostalgia!
Beans cream soup
Could you imagine beans being one of the key ingredients in an exquisite delectable cream soup? Yet, this seemingly rustic filling vegetable when combined with white wine, sweet stewed onion and the freshness of lemon zest creates something really unforgettable, while garlic croutons add a finishing stroke and balance the creaminess of the soup. Just give it a try and you’ll be genuinely surprised!
Salad with beet and chickpeas
This is a perfect winter salad: dietary, healthy, light and extremely nourishing. It doesn’t require any main course to go with and can doubtlessly replace your lunch or dinner. By the way, it’s really delicious (even if you hate beet as I do!): creamy chickpeas, sweet baked beet, crunchy walnuts and salty Feta cheese with marinated onion under sour-sweet dressing. It’s certainly worth giving it a try!
Eggs with chickpeas and spinach
This dish is the best breakfast ever: nutritious, full of protein, filling and absolutely delicious. Soft yolk mixed with slightly spicy sauce covering chickpeas and spinach… mmm! Try this and you’ll never return to humdrum everyday omelets.
Apple pie
Autumn is a time for apples, however most people limit themselves only to baked apples and charlotte cakes. This apple pie, on the other hand, is something different and definitely more refined: soft and juicy melt-in-your-mouth apples covered with fluffy cheese mixture and enveloped in crusty dough… mmm! A perfect companion for cocoa with marshmallow, hot chocolate or tea!
Lithuanian borscht
This variation of borscht is just what a perfect supper should be: light, nourishing, healthy and delectable. Crispy cucumber, sweet beet, spicy dill, all dissolved in thick Greek yoghurt or kefir. It requires no cooking and is incredibly easy to prepare, especially once you have everything ready. And although it’s usually served with boiled potatoes, it can also be an independent dish. Try and surprise your friends and relatives with this unconventional borscht!
